I know that the idea of pet safe indoor plants has been discussed here, but I don't think I've ever seen anything about it actually being done. It's one thing to know that you need non-toxic plants and a type of soil that doesn't have any additives, but it's a totally different animal to actually grow things lol I don't have much of a green thumb, so if anyone has ever grown anything indoors for their rats, I'd love a little how-to or something. I live in a dry climate as well which might influence what types of plants I can actually grow successfully.

There are plenty of plants that rats can't or won't eat which aren't poisonous. Pretty much speak to your local plant shop and decide what you like, then look up the plant to see if it's poisonous.

I'd kind of stay away from bulbs and tuberous plants, rats might find them tasty. I have a couple of exotic bulbs that the rats have dug up, but so far they didn't eat them.
