I normally give my girls cut up cucumber (without the peel), carrot (without peel) as well as celery, kale and spring salad mix (I take out the purple cabbage). Is there anything else I should be giving them?

I feed them this once in the morning before I leave for work (it's a smaller portion since they sleep throughout the day) and a big portion at night around 8:30 or so.

80% of a rats diet should be lab blocks and 20% fresh fruits/veggies. http://ratfanclub.org/diet.html
It sounds like you feed them to much veggies and not enough blocks.

Even if they always have access to 2 different types of lab blocks? I'm just concerned because they honestly almost always eat all their food given at night. In the morning sometimes they do and sometimes they don't.

Try cutting down the veggies to once a day or once every other day.

I won't give them anything in the morning since sometimes it goes to waste anyways. I'll give them a treat instead :). Thanks to everyone who commented :)

Just make it a healthy treat...like a small bit of yougurt and even then I wouldnt do it every day :)
