Haven't really had any GOOD meat for them to eat for a while (just the kinds with a 1000 preservatives, taste enhancers and such),they have gotten insects instead
Is it fine for rats to eat insects instead of meat? They will get meat soon again but it's been about a month or more.

Crickets and mealworms are a good source of protein. They should always be store bought though because wild insects could possibly carry parasites.

My hedgehog's food has freeze dried meal worms in it and whenever I am filling his food bowl I will take out a couple mealworms for my rats. They love it.

insects are a good option, but its worth bearing in mind they are high in fat too, i would look out for dried shrimp as a better alternative, or maybe a good quality dog kibble
