I have 3 50L bags of paper bedding for the ratties stocked. However, they're all different brands because different ones were on sell when I was at the store. Their previous was CareFresh, now they have Full Cheeks, and there's also a bag of Kaytee. It didn't occur to me beforehand that it might not be a good idea to change brands?

You can switch between brands. There's no reason why you can't. All paper based bedding are pretty much the same in terms of texture and size so your rat won't notice the difference. I'd be more cautious if switching between different types of bedding, say from paper to pellets, since some rats may be finicky about bedding.
