I'm just wondering what you guys do as far as portion control for your rats. With all my animals, I normally just fill a bowl or dish and leave it for them so they know it's there if they're hungry and I've never had a problem with them over-eating or anything.

Is this bad to do with rats? I know a lot of people have a specific "feeding time" where they give them their lab blocks and veggies/fruits.

Where I work at different times of the day I just find it easier for myself to fill a dish and leave it in their cage so they have unlimited access to their food and whenever I get home at night I give them their other fresh foods. Is this okay to do with rats?

I don't think that is a bad idea. I can't do because my rats would just eat it all at once and plus they don't know how to share food. I would just make sure they don't get to fat.:)
