So here's the story, I'll probably move it to the right behavioral sub section afterwards or something.

So I've had rats of various origins for several months now, everything was great until today. One is a mother of 10 two week old pups, she has let me handle and help with the nest since day one. Today she nipped me a couple times when I was spot cleaning the cage like I usually do, then while cleaning the litterbox she bit HARD. I bled for like 10 minutes, and now I don't know what to do. What makes a rat docile and sweet one moment, then bite you 4x the next? How do you handle a rat post bloody bite? She has always been mean to the other rats, how likely are her babies to inherit her sneaky mean disposition? What do I do about the babies now?
