When I'm holding one of my rats her stomach jerks a bit I includes it happen when I have her picked up and her teeth also chatter sometime when I hold her this has been happening for a while now but I'm just curious in why there doing this stuff

Could she be bruxing? That is when they grind their teeth together and make a sort of chittering noise. It often means they are content, but can also mean they are stressed. It also helps them to grind down their teeth so they don't get too long.
If they are really getting into it, sometimes they will also boggle, which is when their eyes sort of pop in and out. Weird but cute.
